Also known as yellowtail, young amberjack, or buri, our hamachi is a premium fish farmed in a stress-free environment and then harvested using a revolutionary patented technique called cho-rei-kun. This precise technique results in a bright color, better yield, longer shelf life, and no sour aftertaste.
Part of cho-rei-kun, called ike jime, offers an added step to ensure quality. During this method, up to 99% of the blood is removed, resulting in improved smell and appearance. The fish is then processed and frozen before the onset of rigor mortis. It only takes 1 hour for the fish to be frozen compared to 12 to 36 hours for competitor products.
The high oil content gives a very smooth texture and taste, making it popular in sushi bars across the US. Hamachi can be sautéed, steamed, or grilled medium rare. It can also be used in recipes calling for swordfish or kanpachi.
