Chilean Sea Bass – Fillet
$300.00 ($50.00 / lb)
The Chilean Sea Bass (also known as the Patagonian Toothfish) has to be one of the most interesting and delicious offerings that we have here at Browne.
This incredible fish can be found 4,109 km’s off of the Australian south coast in the sub-Antarctic. This is an icy inhospitable environment where small crews of tough fisherman venture to catch these elusive and highly prized fish.
Why do these fishermen bother to venture so far off of the Australian coastline to catch these fish? They do so because these Toothfish are quite simply put, one of the most delicious fish our oceans have to offer.
Their sweet flavor and snow-white flesh have quickly made the Chilean Seabass a coveted selection in some of the most prestigious restaurants worldwide. The stunning balance between flavor and texture gives a culinary versatility which is rare in fish fillets.
The high fat and Omega content of the Chilean Seabass make it well suited to both dry and moist heat preparations. Its flesh provides the perfect canvas for any number of flavor profiles & combinations.
This Bass is just as versatile as it is delicious and commands its high price point for that reason.
If you are worried about whether this fish is a sustainable option, then don’t be. Our Chilean Seabass from ‘Glacier 51 Toothfish’ has been certified sustainable by the Marine Stewardship Council (MSC) and has also been rated Best Choice by the Monterey Bay Aquarium’s Seafood Watch Program.
